RECIPES WITH KASSERI
Kasseri Topped Chicken 1 cup plain low-fat yogurt 1 large garlic clove, minced 1/2 tsp. dried oregano, crumbled 1/4 tsp. black pepper 4 boneless skinless chicken breast halves 1/3 cup BelGioioso Kasseri, shredded Whisk first 4 ingredients in medium bowl. Add chicken and turn to coat. Cover and let stand 30 minutes. Preheat broiler. Line broiler pan with foil. Remove chicken from marinade in bowl. Broil chicken 6 minutes. Turn chicken over. Brush with reserved marinade. Sprinkle with BelGioioso Kasseri and broil until chicken is cooked through, about 4 minutes. Transfer to plates. Garnish with parsley and serve. Serves 4. Kasseri Burgers 1 1/2 lbs. ground beef 1/3 cup steak sauce 2 Tbsp. BelGioioso Parmesan, grated Dash of dried oregano and basil 1/2 cup prepared spaghetti sauce 6-8 oz. BelGioioso Kasseri, sliced 4 fresh hamburger rolls Condiments: tomatoes, lettuce, olives and onions Combine ground beef, 3 Tbsp. steak sauce, BelGioioso Parmesan, oregano and basil. Shape into 4 patties and set aside. Mix remaining steak sauce and spaghetti sauce in small bowl, set aside. Melt BelGioioso Kasseri onto grilled burgers. Place on buns and top with sauce and condiments of choice. |
Pasta with Chicken, Basil and Garlic 1/4 cup plus 1 Tbsp. olive oil 1/4 cup minced garlic 3/4 lb. linguine 1 1/2 lb. skinless boneless chicken breasts, cut into thin strips 2 poblano chiles, seeded, cut into thin strips 3 plum tomatoes, seeded, diced 1/2 cup thinly sliced fresh basil 4 oz. prosciutto, chopped 2 Tbsp. butter 1 cup BelGioioso Kasseri, grated Salt and pepper Heat 1/2 cup oil in heavy skillet over medium heat. Add garlic and sauté 6 minutes until light golden brown. Strain oil into glass measurement cup, reserving garlic. Add enough oil to measure 1/4 cup. Set aside.
Cook linguine in large pot of boiling salted water until al dente. Meanwhile, heat reserved oil in large heavy skillet over medium-heat heat. Add chicken and sauté 5 minutes. Add poblanos and sauté 2 minutes. Add tomatoes, 1/4 cup basil, prosciutto and 2 Tbsp. cooked garlic and sauté until chicken is cooked through, about 1 minute. Remove from heat. Add butter and stir until melted. Drain linguine and place in large bowl. Add chicken mixture and 1/2 cup BelGioioso Kasseri; toss to coat. Season with salt and pepper. Sprinkle with remaining 1/4 cup basil and 2 Tbsp. cooked garlic. Serve with remaining BelGioioso Kasseri. Serves 4. |
