1 12 oz. BelGioioso Unwrap & Roll® Fresh Mozzarella Sheet
2 oz. BelGioioso Mascarpone cheese
1/4 cup roasted red and yellow pepper strips
1/4 cup roasted zucchini strips
1/4 cup roasted eggplant strips
1/4 cup roasted mushroom slices
Fresh Italian parsley, chopped
Unroll BelGioioso Unwrap & Roll® and cut in half, creating two sheets. Spread a thin layer of BelGioioso Mascarpone on each sheet and top with a thin layer of assorted vegetables. Roll each sheet and slice into pinwheels. Serve as an appetizer.
