RECIPES WITH

PARMESAN

Creamy Mushroom and Prosciutto Penne

1 cup chicken broth

3/4 cup whipping cream

1/4 tsp. cayenne pepper

1/2 cup BelGioioso Parmesan, grated

1 Tbsp. butter

12 oz. mushrooms, cut into 1/2" pieces

12 oz. penne pasta

1 1/2 cups frozen peas, thawed

8 thin prosciutto slices, cut into 1/4" strips

Bring broth, cream and cayenne to boil in medium saucepan. Reduce heat and simmer about 20 minutes until liquid is reduced to 3/4 cup. Remove from heat. Mix in 1/2 cup BelGioioso Parmesan; cover and keep warm. Melt butter in large nonstick skillet over medium-high heat. Add mushrooms; sauté until brown and tender. Remove from heat.

 

Meanwhile, cook pasta in large pot of boiling salted water until al dente. Drain pasta and return to pot. Add cream mixture, mushrooms and peas and stir over low heat about 3 minutes, until well coated with sauce. Mix in prosciutto. Cover and let stand 1 minute. Transfer to bowl. Serve, topping with BelGioioso Parmesan.

 

Meatballs with Parsley and Parmesan

4 large eggs

1/2 cup fresh French bread crumbs

6 Tbsp. BelGioioso Parmesan, grated

3 Tbsp. olive oil

1/4 cup chopped fresh parsley

3 large garlic cloves, minced

2 tsp. salt

1 tsp. ground black pepper

2 lbs. lean ground beef

Additional olive oil (for frying)

Stir eggs, bread crumbs, BelGioioso Parmesan, 3 Tbsp. olive oil, parsley, garlic, salt and pepper in large bowl to blend. Add ground beef and mix thoroughly. Form mixture into 1 1/2" diameter meatballs.

Pour enough oil into heavy large skillet to coat bottom; heat over medium-low heat. Working in batches, add meatballs and fry until brown and cooked through, turning frequently and adding more oil as needed, about 15 minutes per batch. Transfer to plate. Serve immediately.

 

Parmesan Breaded Chicken Breast

1/2 cup BelGioioso Parmesan, grated

1/4 cup dry bread crumbs

1 tsp. oregano

1 tsp. parsley flakes

1/4 tsp. paprika

1/4 tsp. salt

1/4 tsp. ground black pepper

2 lbs. boneless, skinless chicken breast halves

2 Tbsp. butter, melted

Heat oven to 400F. Mix BelGioioso Parmesan, bread crumbs, oregano, parsley, paprika, salt and pepper. Dip chicken in butter, coat with cheese mixture. Place in 10"x15" baking pan sprayed with cooking spray. Bake for 20-25 minutes or until cooked through. Serves 6.
