Gorgonzola Sweet Potato Chips

Ingredients

Sweet Potato Chips

  • 1 lb. sweet potatoes
  • Oil for frying
  • Salt

Cheese Sauce

  • 1 Tbsp. unsalted butter
  • 1 Tbsp. flour
  • 1 cup heavy whipping cream
  • 4 oz. BelGioioso Crumbly Gorgonzola cheese, crumbled
  • Salt and pepper
  • 1 Tbsp. flat leaf parsley, minced

Garnish

  • 2 oz. BelGioioso Crumbly Gorgonzola cheese, crumbled
  • 5 slices thick cut bacon, cooked, diced
  • 1 avocado, peeled and diced
  • 1/2 cup scallions, sliced thinly

Directions

Sweet Potato Chips:

Heat oil to 330 degrees. Scrub sweet potatoes of all grit, slice thinly on a mandolin.  Carefully drop into oil and fry, stirring occasionally about 2 minutes or until lightly golden.  Remove from oil onto a paper towel lined baking sheet and immediately sprinkle with salt.

Cheese Sauce:

In a sauce pan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.  Slowly add the cream, whisking continuously, cook until sauce is slightly thickened.  Take sauce off of heat and add 4 oz. crumbled Gorgonzola, continuing to whisk until cheese is melted and sauce is smooth.  Season with salt and pepper to taste and stir in parsley.

Garnish:

Place chips onto a serving platter and drizzle with cheese sauce. Garnish with crumbled Gorgonzola, bacon, avocado, and scallions. Serve immediately.
