Ingredients

  • 1 12 oz. BelGioioso Unwrap & Roll® Fresh Mozzarella Sheet
  • 2 oz. BelGioioso Mascarpone cheese
  • 1/4 cup roasted red and yellow pepper strips
  • 1/4 cup roasted zucchini strips
  • 1/4 cup roasted eggplant strips
  • 1/4 cup roasted mushroom slices
  • Fresh Italian parsley, chopped

Directions

Unroll BelGioioso Unwrap & Roll® and cut in half, creating two sheets. Spread a thin layer of BelGioioso Mascarpone on each sheet and top with a thin layer of assorted vegetables.

Roll each sheet and slice into pinwheels. Serve as an appetizer.
