1/2 cantaloupe, seeded
1/2 seedless watermelon
1/2 honeydew melon, seeded
8 oz. container BelGioioso Fresh Mozzarella Ciliegine or Pearls cheese
1/4 cup mint leaves, chopped, additional for garnish
2 Tbsp. extra virgin olive oil
1 1/2 Tbsp. honey
1 Tbsp. white balsamic vinegar
Kosher salt to taste
Use a melon baller to scoop balls from cantaloupe, watermelon and honeydew halves and place in a large bowl. Add the Fresh Mozzarella and mint leaves.
In separate bowl, whisk together olive oil, honey and white balsamic vinegar and season with kosher salt. Add to melon and cheese, toss to coat. Garnish with additional mint leaves.
