Breaded Zucchini Rolls with Burrata
Breaded Zucchini Rolls with Burrata

Ingredients

1 whole green zucchini, sliced in long strips using a mandolin slicer
1 cup flour
2 eggs
1 cup peanut oil
8 oz. BelGioioso Burrata cheese, sliced to include filling
Roasted red pepper strips

Directions

Dredge a few slices of zucchini in flour and egg and fry in a small amount of peanut oil. Fry on both sides until slightly brown.

Remove from oil and let drain on paper towel for a minute before adding BelGioioso Burrata slice and rolling. Repeat until zucchini and Burrata are used.

Serve immediately with a roasted red pepper garnish.
