Burrata Filling, Beets and Berries Salad

Ingredients

  • 5 oz. arugula
  • 1 1/2 lbs. beets, roasted and sliced
  • 6-8 oz. blackberries
  • 2 oranges, peeled and sliced into wedges without pith
  • 1 shallot, thinly sliced
  • 2 oz. pea shoots or other microgreen
  • 4 oz. BelGioioso Burrata Filling (“Stracciatella”) cheese
  • 2 Tbsp. pistachios, shelled and crushed

Honey Citrus Vinaigrette Dressing
  • 1/4 cup olive oil
  • 1 Tbsp. champagne vinegar
  • 2 tsp. honey
  • 2 Tbsp. orange juice, freshly squeezed
  • 1 tsp. lemon juice, freshly squeezed
  • 1/2 tsp. salt
  • Freshly ground pepper, to taste

Directions

To make dressing: Combine all ingredients into a cruet or small container with a tight seal. Shake or stir vigorously until dressing emulsifies. Taste and add more salt and/or pepper if desired. Set aside.

To make salad: Add arugula to a large serving bowl. Scatter roasted beets, blackberries, oranges slices and shallot over top of greens. Next add pea shoots and Burrata Filling. Garnish with crushed pistachios. Dress salad after serving.
