To make dressing: Combine all ingredients into a cruet or small container with a tight seal. Shake or stir vigorously until dressing emulsifies. Taste and add more salt and/or pepper if desired. Set aside.
To make salad: Add arugula to a large serving bowl. Scatter roasted beets, blackberries, oranges slices and shallot over top of greens. Next add pea shoots and Burrata Filling. Garnish with crushed pistachios. Dress salad after serving.
