Fall Fontina Sandwich

Ingredients

  • 1/2 cup butter, room temperature
  • 8 slices good-quality bread
  • 16 slices BelGioioso Fontina cheese
  • 1 lb. shaved or thinly sliced turkey
  • 1 Granny Smith apple, sliced
  • Cranberry sauce or Cranberry Chutney (recipe follows)
For Cranberry Chutney
  • 1 small red onion
  • 3/4 cup champagne vinegar
  • 4 cups dried cranberries
  • 1 tsp. Kosher salt
  • 1 tsp. chopped sage
  • 1 1/2 Tbsp. honey
  • 2 cups water

Directions

Preheat panini press or grill pan. Butter two slices of bread and place face down on a cutting board. Top one slice of bread with BelGioioso Fontina, turkey, sliced apple and 1 Tbsp. of cranberries. Place top on sandwich and put sandwich on pan. Grill until golden brown. Repeat with remaining sandwiches.

Cranberry Chutney

Sauté onion over medium heat. Deglaze with vinegar. Add remaining ingredients and simmer for 20 minutes.
