Preheat oven broiler.
Place Ricotta con Latte® into mixing bowl and add 1/4 cup sugar and lemon zest, stir to combine ingredients. Place a 1/4 cup of ricotta mixture into 8 individual ramekins or 1/2 cup into 4 larger ramekins. Sprinkle the remaining sugar evenly over the ricotta mixtures in each ramekin.
Place ramekins onto a large baking sheet and heat under oven broiler until sugar is caramelized. Remove from oven and allow sugar to harden. Garnish with fresh raspberries and mint before serving.
