Ingredients
1 cup fresh tomatoes, chopped
1 cup fresh cucumber, chopped
1 Tbsp. fresh basil, chopped
1 tsp. fresh thyme, chopped
1 Tbsp. extra virgin olive oil
1/4 cup BelGioioso Mascarpone cheese
4 oz. BelGioioso Auribella® cheese, shaved
1 large French baguette, sliced
Directions
Coarsely chop tomatoes and cucumbers and combine with the fresh herbs and extra virgin olive oil. Toast the sliced bread and let cool. Spread slices of bread with a thin layer of BelGioioso Mascarpone and top with bruschetta mixture. Garnish appetizers with shavings of BelGioioso Auribella®.
