Ingredients
1 Tbsp. olive oil
1/4 cup green bell peppers, sliced
1/4 cup red bell peppers, sliced
1/4 cup yellow bell peppers, sliced
1/4 cup red onions, sliced
La Bottega di BelGioioso® Peperoncino®, sliced
Baguette, sliced into 1/4 inch pieces
BelGioioso Mascarpone or butter
Directions
Heat griddle or skillet over medium heat. Add olive oil, bell peppers and onions. Sauté and until tender; set aside.
Spread Mascarpone on one side of each bread slice. Top each bread slice with cooked peppers and onion, a slice of Peperoncino® and a bread slice. Cook each side till golden brown and cheese has melted, about 2-4 minutes. Serve warm.
