Fresh Mozzarella Grilled Vegetable Appetizer

Ingredients

  • 2 cups spring green salad mix
  • 1/4 cup extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • Salt and pepper
  • 4 oz. marinated roasted tomatoes
  • 4 oz. assorted marinated olives
  • 2 oz. marinated roasted peppers
  • 4 oz. grilled asparagus spears
  • 4 oz. sliced prosciutto
  • 4 oz. BelGioioso Fresh Mozzarella Pearls cheese
  • 4 oz. BelGioioso Fresh Mozzarella Ciliegine cheese
  • 4 oz. BelGioioso Fresh Mozzarella Bocconcini cheese
  • 4 oz. BelGioioso Burrata (2 oz.) cheese

Directions

In a large salad bowl, toss spring greens with olive oil and balsamic vinegar. Salt and pepper to taste. Place dressed greens onto a large platter. Top with marinated tomatoes, olives, peppers, grilled asparagus and sliced Prosciutto.

Arrange Fresh Mozzarella and Burrata balls on top and serve immediately with grilled bread for a delicious appetizer.
