Ingredients
8 oz. BelGioioso Auribella® or BelGioioso Kasseri cheese
2 lbs. Italian plum tomatoes
1/4 cup red onion, sliced
3 Tbsp. olive oil
1 Tbsp. red wine vinegar
1 tsp. fresh oregano
Salt and pepper to taste
Fresh basil leaves
Directions
Cut tomatoes into pieces. Cut BelGioioso Auribella® or BelGioioso Kasseri into thin slices. Toss tomatoes, cheese and onions with olive oil, vinegar, salt, pepper and oregano. Serve immediately, garnished with fresh basil.
