3 cups pancake batter (prepared from a mix or scratch)
1 1/2 Tbsp. freshly grated lemon zest
2/3 cup BelGioioso Ricotta con Latte® cheese
Unsalted butter for the griddle and serving
Prepare the pancake batter and stir in the lemon zest. Fold in the BelGioioso Ricotta con Latte® very gently. Heat the griddle and add some butter. Drop the pancake batter onto the heated griddle and heat on both sides until brown and center of pancake is cooked through. Serve pancakes warm with extra Ricotta con Latte®, fresh fruit and warm syrup.
