Cheesy Baked Poblano Peppers

Ingredients

  • 4 Poblano peppers, split in half, seeds removed
  • 2 cups seasoned grilled chicken breasts, sliced into thin pieces
  • 8 oz. BelGioioso La Bottega Crescenza-Stracchino™ cheese, cubed
  • 4 oz. BelGioioso La Bottega CreamyGorg® or BelGioioso Crumbly Gorgonzola cheese, cubed
  • 4 oz. BelGioioso La Bottega Peperoncino® cheese, shredded
  • 1 oz. fresh cilantro, if desired

Directions

Preheat oven to 400˚F. Place split Poblano peppers onto a parchment lined baking sheet. Fill each with grilled chicken pieces and cubed Crescenza-Stracchino cheese.

Bake for 15 minutes, then remove from oven and top half the peppers with Gorgonzola cheese and the other half with Peperoncino® cheese.

Return to oven and bake or broil until cheese is melted. Serve peppers garnished with fresh cilantro if desired.
