1 lb. pasta, prepared and cooled
3 Tbsp. extra virgin olive oil
8 oz. BelGioioso Ricotta Salata cheese, cubed
1 cup grape tomatoes, sliced in half
Fresh basil leaves, ripped into small pieces
Prepare pasta and let cool. Toss with olive oil, BelGioioso Ricotta Salata, tomatoes and fresh basil. Let marinate for an hour at room temperature and serve as a side or add grilled chicken for a main dish option.
