Created from a recipe rich in tradition, BelGioioso Provolone carries on a legacy of good taste. Never smoked or bleached, this cheese is crafted from fresh local milk, brined, roped, and hung to age in special curing rooms to develop its signature flavor and tantalizing aroma. BelGioioso offers four varieties of Provolone whose flavors range from mild and buttery to pleasantly aromatic and robust. Each flavor is available in a variety of specialty shapes and sizes.

How to Enjoy This Cheese

Chunk for snacks or cheeseboards and antipasto.  Slice for cheesesteak sandwiches, pizzas, burgers, or grilled meats. Shred into lasagna or hot or cold pastas.

About This Cheese

  • Texture: Ranges from soft to firm, depending on age
  • Flavor: Mild and full to strong and sharp, depending on age
  • Appearance: Pale yellow, smooth. Aged product may be slightly
  •   cracked with a thin rind of wax that should be removed.
  • Milk Source: Cow’s milk, rBST free
  • Aging: Mild Provolone – Aged 60 days
    • Medium Provolone – Aged 4 months
    • Sharp Provolone – Aged 7 months
    • Extra Sharp Provolone – Aged 12 months
    • Provolone Extra – Aged 24 months 

Pairings

Olives, roasted peppers, artichokes, cured meats, bread, grapes, cashews, strong
beer, wine.
